The winegrowing program on DAOU Mountain is guided by unconditional respect for the land and a continuous marveling at its potential.
DAOU Mountain is a terroir of remarkable equilibrium.
Here, the calcareous clay soil is comparable to Bordeaux's Right Bank, while the buffered Pacific microclimate is similar to Saint Helena - a perfect confluence of elements. DAOU Mountain is blessed with extraordinary phenolic output, yielding some of the darkest, most deeply textured wines in the world. These wines are never acidified, as the ideal level of acidity comes naturally.
DAOU Mountain is blessed with ideal conditions for Bordeaux varieties, most notably Cabernet Sauvignon.
The surrounding Adelaida District is the regarded as the next frontier for world-class Cabernet Sauvignon. With fewer than 115 acres planted to vine on DAOU Mountain, 68 percent is dedicated to Cabernet Sauvignon, with the remaining acreage reserved for Cabernet Franc, Petit Verdot, Malbec, Merlot, Sauvignon Blanc and Sémillon.
DAOU Mountain is planted to a variety of clones chosen to match the terroir and microclimate of each vineyard block.
Some of these clones are without precedent in the Paso Robles region. The legendary Qualitative Clones from France was chosen for its proven record of producing some of the finest Cabernet Sauvignon in the world.
DAOU Mountain blesses our fruit with some of the highest phenolics in the world, inspiring us to remain at the vanguard of phenolic analysis.
Winemaker Daniel Daou employs proprietary technologies for testing phenolics during fermentation, enabling him to precisely measure his own tasting impressions. This intensive union of sensory and science allows Daniel to meet his vision for each wine, and to achieve consistent color, tannin and mouthfeel from vintage to vintage.
Our viticultural mindset at DAOU Mountain is meticulous and demanding.
The vines are grown at a high density. We employ deficit irrigation to achieve naturally beneficial vine stress. We do not hesitate to aggressively drop clusters at any time during the growing season for the sake of balanced ripening and concentrated flavors. We leave no option unexplored in the pursuit of quality and expression of place.
